Here’s more in the series of my recent obsession with stuffed avocados. This time I did a pretty basic egg salad, and then some smoked salmon salad. These are great appetizers, side dishes, or light lunches. Shrimp salad and tuna salad stuffed avocados would also be big hits in our house. And let’s not forget that a hummus stuffed avocado would be fabulous.
Avocado Appetizers
Ingredients
- 8 small avocados
- Lemon
- 4 hardboiled eggs, diced
- 1/4 cup diced celery
- 1 TBSP yellow mustard
- 2 TBSP mayo
- 1/4 tsp smoked paprika, and more to sprinkle on top
- Salt and pepper
- 3-4 oz smoked salmon, broken apart
- 4 oz cream cheese, softened
- 1/2 cup mashed garbanzo beans
- 2 TBSP broken pecans
- 2 TBSP diced celery
- 2 TBSP capers
- 1 TBSP dried dill
- 1/4 tsp granulated onion powder or 1 TBSP minced green onion
- Pepper

Instructions
- Wash avocado, leave skin on, cut in half and remove pit. Squeeze lemon over cut surfaces. Scoop some of the center of each avocado out, to make room for the filling. Dice the avocado you scooped out, and lightly sprinkle the halves of avocado with salt.
- Mix the diced avocado with the rest of the ingredients, and heap this filling into the avocado halves. Garnish with a sprinkle of smoked paprika.
- Wash avocado, leave skin on, cut in half and remove pit. Squeeze lemon over cut surfaces. Scoop some of the center of each avocado out, to make room for the filling. Dice the avocado you scooped out, and lightly sprinkle the halves of avocado with salt.
- Mix the diced avocado with the rest of the ingredients, and heap this filling into the avocado halves. Garnish with a slice of red onion, half cucumber slice, or young celery leaves.
