If you’re a mushroom lover, like I am, king oyster mushrooms are a special treat. I got these at an Asian market on my last trip to Austin. You can also find them at grocers like Central Market. In the Asian market, I paid $6.00 for 21 ounces. In other markets, they are easily $20.00 / lb.
They are extremely “meaty” mushrooms. Pretty much the whole thing is edible, except the fibrous area where it attaches to the ground. When you’re preparing them, you can tell where that fibrous area ends, much like asparagus stems. I cook them very simply by cutting them into thick disks and sautéing them in butter, in a single layer, flipping each one as it gets golden. I pepper them while they’re cooking, and salt them when I remove them from the pan.
