Use your pecan harvest to create healthy snacks, or gifts. In looking for ways to use the last pecan harvest, I decided to do an upgrade of my old pecan butter recipe. It’s pretty delicious, and pretty easy to eat. Because of that, a small batch is my best option. So, this is a recipe to fill a pint jar.
Pecan Butter
Ingredients
- 1/2 cup pecans
- 2-4 TBSP extra virgin coconut oil
- 2-4 TBSP honey
- 1/2 tsp vanilla extract
- 1/4 tsp ground cinnamon
- 1/8 tsp salt
Instructions
- In the small bowl of a food processor, grind pecans well.
- Add the rest of the ingredients and process until creamy.
- Serve on bread, with oatmeal, with apple slices, with a spoon!..........
