Naturally fermented raw sauerkraut is really good for you. However, I’ve only appreciated it in a Reuben sandwich, until now. Sauerkraut salad is a superb side dish, much like slaw. And although I love slow cooked pork and sauerkraut, all the beneficial bacteria is killed by the heat. Sauerkraut Salad is excellent with fish, bbq, pork, and more. Since it’s raw, you get all those great probiotics, in a delicious side.
Sauerkraut Salad
Ingredients
- 2 cups sauerkraut
- 1 cup celery, finely sliced
- 1 cup sweet onion, finely sliced
- 1 cup carrot, finely sliced
- 1/2-1 cup roasted red pepper, diced (or pimento)
- 1/3 cup sour cream
- 1-2 TBSP white wine vinegar
- 2 TBSP neutral oil, like grapeseed
- 1 TBSP Dijon
- 1 tsp dill weed
- 1 tsp mustard seed
- 1/2-1 tsp celery salt
Instructions
- Toss all ingredients together. Let marinate at least 4 hours.
