Spinach Stuffing Balls are another classic recipe worth resurrecting. They are perfect as a side, an appetizer, a snack, or in chicken soup.
Spinach Stuffing Balls
Ingredients
- 1/2 cup butter
- 2 large onions, chopped
- 20 oz frozen chopped spinach, defrost and squeeze out excess liquid
- 6 eggs
- 2 cups herb stuffing mix
- 1 cup grated Parmesan
- 1 tsp fresh thyme leaves
- 1 tsp pepper
- 1/2 tsp garlic pwd
- 1/2 tsp salt
- Grating of fresh nutmeg
Instructions
- In a skillet, melt butter.
- Add onions and cook until they're translucent.
- Stir in spinach and cook for another couple minutes. Set mixture aside to cool.
- In a large bowl, beat eggs.
- Combine the remaining ingredients with the eggs.
- When spinach mixture has cooled, add to stuffing mixture.
- Place in fridge for at least 1 hour.
- Heat oven to 350.
- Form 1" balls and place on parchment lined baking sheet.
- Bake about 20 minutes until some edges are slightly brown.
- If you don't want to cook them all, freeze in a single layer, then place in a ziplock freezer bag.
