Angie’s Chocolate Frosted Cookies

Let’s start the next “Specials” week with a cookie recipe.  This is the recipe for chocolate cookies my mom made for us when I was growing up.  Everyone I’ve made these for loves them.  I’ll bet you will too!

Angie's Chocolate Frosted Cookies

Ingredients

  • 1/2 cup butter
  • 4-6 TBSP cocoa
  • 1 TBSP coconut oil
  • 1 cup packed brown sugar
  • 1/2 cup milk, room temperature
  • 1 egg, beaten
  • 1 tsp vanilla
  • 1 3/4 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 1/2 to 1 cup chopped nuts, optional
  • Frosting
  • 3 TBSP butter, room temperature
  • 1 TBSP coconut oil
  • 1 1/2 cups powdered sugar
  • 2 TBSP cocoa powder
  • 2-6 TBSP milk or cream

Instructions

  1. In medium saucepan, melt over low flame butter, cocoa, and coconut oil.
  2. Add brown sugar, mix well, and remove from flame.
  3. Add milk, egg, and vanilla and mix well.
  4. In a separate bowl, mix together flour, soda, and salt.
  5. Add dry ingredients to cocoa ingredients, and mix well.
  6. Set in fridge until dough firms up slightly.
  7. Drop dough in large walnut size pieces onto greased cookie sheet.
  8. Bake 350° for 12 to 15 minutes
  9. Frosting
  10. With an electric mixer beat butter and coconut oil together.
  11. Whisk together sugar and cocoa powder.
  12. Add sugar and cocoa to butter mixture.
  13. Add milk or cream until it's the consistency you prefer.
  14. Frost cookies when warm.
