Let’s start the next “Specials” week with a cookie recipe. This is the recipe for chocolate cookies my mom made for us when I was growing up. Everyone I’ve made these for loves them. I’ll bet you will too!
Angie's Chocolate Frosted Cookies
Ingredients
- 1/2 cup butter
- 4-6 TBSP cocoa
- 1 TBSP coconut oil
- 1 cup packed brown sugar
- 1/2 cup milk, room temperature
- 1 egg, beaten
- 1 tsp vanilla
- 1 3/4 cup flour
- 1/2 tsp baking soda
- 1/2 tsp kosher salt
- 1/2 to 1 cup chopped nuts, optional
- 3 TBSP butter, room temperature
- 1 TBSP coconut oil
- 1 1/2 cups powdered sugar
- 2 TBSP cocoa powder
- 2-6 TBSP milk or cream

Instructions
- In medium saucepan, melt over low flame butter, cocoa, and coconut oil.
- Add brown sugar, mix well, and remove from flame.
- Add milk, egg, and vanilla and mix well.
- In a separate bowl, mix together flour, soda, and salt.
- Add dry ingredients to cocoa ingredients, and mix well.
- Set in fridge until dough firms up slightly.
- Drop dough in large walnut size pieces onto greased cookie sheet.
- Bake 350° for 12 to 15 minutes
- With an electric mixer beat butter and coconut oil together.
- Whisk together sugar and cocoa powder.
- Add sugar and cocoa to butter mixture.
- Add milk or cream until it's the consistency you prefer.
- Frost cookies when warm.
