The asparagus production is increasing every day. I’m not complaining, but I do need to step up my recipe skills. For a fast and delicious side dish, Asparagus Olives and Parmesan is perfect for spring.
Asparagus Olives and Parmesan
Ingredients
- 2 TBSP butter
- 1 1/2 pounds medium asparagus, cleaned and cut into 2" pieces at an angle
- Salt and pepper
- 3 TBSP pitted kalamata olives (or Mediterranean), halved
- 1/2 tsp granulated garlic powder
- 1 TBSP chopped fresh basil
- 1/4 cup parmesan
Instructions
- Heat butter in a large skillet over medium heat.
- Add the asparagus, salt, and pepper. Cook an stir, until the asparagus is bright green and crisp-tender, 5 to 7 minutes.
- Add the olives, garlic, and basil and toss well.
- Place in serving bowl. Top with parmesan. Serve.
