It was a quick trip to Austin this week. Our first stop was Wheatsville Coop. They had some great fresh sausages. I bought chorizo sausage, and some chorizo verde sausage. I did get one other kind that was really delicious, but now I can’t remember what it was. I had them packaged together, so no name appeared on the wrapper.
We had lunch at Kerbey Lane, and it was delicious. I had chicken fried chicken with jalapeno gorgonzola mashed potatoes, and collard greens. I’d mention the biscuit, but I think the baker was having an off day – it was tough. Nina had migas, black beans, and fried red skin potato hash browns. We left very happy. I had the camera today, but left it in the car. I remembered when we got our food, and it would have been cold, if I had tried to run out and get it, because we parked so far away. I know, same old story.
After lunch, we walked over to Pasta & Co. I bought some fresh cashew and manchego stuffed chipotle pasta ravioli. I already had visualized a sauce with the sausages, I’d bought earlier. And so it materialized, when I got home. I sauteed the chorizo sausages, removed them from the pan, and cut them up. Then, I sauteed some spinach from our garden, in the same pan. Meanwhile, I cooked the ravioli, then tossed the sausage and ravioli with the spinach. It was too insanely good to describe, but I did get a picture!
