Author: Lanie Fioretti

My name is Lanie Fioretti and although I am not a classically trained chef or a degreed nutritionist, I have been studying food and nutrition voraciously since the early seventies. After working in public health and private practice for 22 years, I retired my dental hygiene license. I have taught cooking classes at Whole Foods and Central Market, done product development for a bakery in east Texas, catered, and been a personal chef. I usually think of myself as an improvisational cook!

The Look of Fall 2016

Soy braised chicken is one of several bad ideas I’ve had lately.  It looked like something we’d like, and in fact, Don loves it.  I think it’s salty.  However, I added it to fried rice, and it’s delicious.  Even if you don’t eat the chicken, the braising liquid is like black gold.  It’s fabulous in…

Sausage and Potato Crustless Quiche

Posted on September 23, 2016September 26, 2016 by Lanie Fioretti

I’ve done so many frittata recipes that I’ve decided to step-up my game, at least in vocabulary!  Essentially, the Sausage and Potato Crustless Quiche is a frittata, but the French version (quiche) seems classier today.  I don’t know how frittatas keep falling off my radar.  They are delicious, quick, and easy.  Start with scratch ingredients…

Pickled Shrimp

Posted on September 4, 2016October 5, 2020 by Lanie Fioretti

Need something delicious, cool, and easy for you or guests, then pickle some shrimp!  For a fabulous bite, top a wheat cracker or cucumber slice with cream cheese or Boursin cheese and a pickled shrimp.  To accompany pickled shrimp try: mix lettuce, avocado, hard boiled egg slices, or marinated artichoke hearts. For some cool ideas, other…
