Author: Lanie Fioretti

My name is Lanie Fioretti and although I am not a classically trained chef or a degreed nutritionist, I have been studying food and nutrition voraciously since the early seventies. After working in public health and private practice for 22 years, I retired my dental hygiene license. I have taught cooking classes at Whole Foods and Central Market, done product development for a bakery in east Texas, catered, and been a personal chef. I usually think of myself as an improvisational cook!

Asparagus Soup

Posted on April 29, 2016October 4, 2020 by Lanie Fioretti

It’s another great year for our asparagus crop.  I haven’t made asparagus soup in a long time, and it was a great way to use the 3 pound harvest I had in the fridge.  There are so many variations you can make with the ingredients, but fresh asparagus is always the star.  If you have…

Turnips are definitely not a regular side in this house, but these are just delicious.  I bought some small red turnips at the Waco Downtown Farmer’s Market, and did a few revisions to a Rick Bayless recipe.  Red turnips loose all the bite that normal turnips have, after they’re cooked. Mi Gran Vida En Laredo

Posted on April 7, 2016October 4, 2020 by Lanie Fioretti

This spring was a particularly gorgeous time in Laredo.  Everything was green, and lots of things were blooming, including the cacti.  I was fortunate to be able to spend time on my friend’s ranch again, and I could stay out in the country the whole time, but of course, there was shopping and eating out that had…

Pimento Cheesy Potatoes

Posted on March 27, 2016October 4, 2020 by Lanie Fioretti

This will definitely be my “go to” leftover mashed potato dish, it’s incredible. Sometimes I use my regular mashed potatoes, and sometimes I do a mash with sour cream, butter, and cream cheese.  It’s a better presentation, if the potatoes are tighter and a bit chunky mash.
