Author: Lanie Fioretti

My name is Lanie Fioretti and although I am not a classically trained chef or a degreed nutritionist, I have been studying food and nutrition voraciously since the early seventies. After working in public health and private practice for 22 years, I retired my dental hygiene license. I have taught cooking classes at Whole Foods and Central Market, done product development for a bakery in east Texas, catered, and been a personal chef. I usually think of myself as an improvisational cook!

Jalapeño Popper Casserole

Posted on November 1, 2014November 1, 2014 by Lanie Fioretti

Fall 2014 Gardening

Posted on October 26, 2014October 26, 2014 by Lanie Fioretti

I usually don’t like spiders, but this large garden spider has been my buddy all summer. It lives on the door to the greenhouse, and very nicely moves out of the way, when I go in.  They eat an enormous amount of bugs, so I let these guys live.  She layed 3 egg sacks.  One…

Composed Antipasto Salad

Posted on October 20, 2014September 7, 2015 by Lanie Fioretti

This past weekend I had a lasagna dinner request, so I decided to make a composed antipasto salad to go with it, and it was certainly worth a picture. I do similar salads, when I’m cooking at the lodge, they have a certain “wow” factor. Although I use a huge salad bowl at the lodge,…
