Avocado Corn Salad

Making delicious creative sides for burgers that we smoke at the lodge is always a challenge for me.  Besides all our regular toppers (lettuce, tomato, onion, pickles, cheese, jalapeños, and bacon), I like to have something a little special.  Of course, there were the potato sides, crispy tots and potato salad.  But, Avocado Corn Salad is a delicious double duty side.  It’s really a salad and a salsa.  If you want to bump it up a notch add shrimp or crab.

Avocado Corn Salad

Total Time: 20 minutes

Yield: Serves 10-15

Ingredients

    Salad
  • 1 cup chopped tomatoes
  • 1 large garlic clove, halved
  • 1 package frozen corn, defrosted
  • 3 green onions, finely chopped
  • 3 avocados, diced
  • 1/2 cup finely chopped cilantro
  • 2/3 cup crumbled feta
  • 1 TBSP finely chopped fresh or pickled jalapeño (optional)
  • Dressing
  • Zest of 1 lime
  • 1/4 - 1/2 cup lime juice
  • 1/4 cup extra virgin olive oil
  • 1/4 - 1/2 tsp ground cumin (or more)
  • 1/2 tsp granulated garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper
  • I also used Trader Joe's Chili Lime seasoning

Instructions

    Salad
  1. Place tomatoes in a strainer, over a bowl. Toss with salt and let drain.
  2. Rub inside of large bowl with cut side of garlic clove. Set garlic aside for other use.
  3. Combine corn and remaining salad ingredients in garlic rubbed bowl. Stir in drained tomatoes.
  4. Dressing
  5. Whisk together all ingredients. Pour over salad and toss everything together. Let sit for about 10 minutes, then taste. Adjust seasoning to your liking.
  6. Adjust amounts of all ingredients to your taste.
