Making delicious creative sides for burgers that we smoke at the lodge is always a challenge for me. Besides all our regular toppers (lettuce, tomato, onion, pickles, cheese, jalapeños, and bacon), I like to have something a little special. Of course, there were the potato sides, crispy tots and potato salad. But, Avocado Corn Salad is a delicious double duty side. It’s really a salad and a salsa. If you want to bump it up a notch add shrimp or crab.
Avocado Corn Salad
Ingredients
- 1 cup chopped tomatoes
- 1 large garlic clove, halved
- 1 package frozen corn, defrosted
- 3 green onions, finely chopped
- 3 avocados, diced
- 1/2 cup finely chopped cilantro
- 2/3 cup crumbled feta
- 1 TBSP finely chopped fresh or pickled jalapeño (optional)
- Zest of 1 lime
- 1/4 - 1/2 cup lime juice
- 1/4 cup extra virgin olive oil
- 1/4 - 1/2 tsp ground cumin (or more)
- 1/2 tsp granulated garlic powder
- 1/2 tsp smoked paprika
- Salt and pepper
- I also used Trader Joe's Chili Lime seasoning

Instructions
- Place tomatoes in a strainer, over a bowl. Toss with salt and let drain.
- Rub inside of large bowl with cut side of garlic clove. Set garlic aside for other use.
- Combine corn and remaining salad ingredients in garlic rubbed bowl. Stir in drained tomatoes.
- Whisk together all ingredients. Pour over salad and toss everything together. Let sit for about 10 minutes, then taste. Adjust seasoning to your liking.
- Adjust amounts of all ingredients to your taste.
