I hate to admit that I dream of pasta, and the hundreds of ways to prepare it! It’s always a great quick meal. And we still believe that Boursin makes most things better. So, Bacon Boursin Pasta is our new life changing meal! It’s scrumptious, not too rich, and really quick to make.
Next time I make this recipe, I think I’ll make the sauce with one jar of Trader Joe’s Cacio e Pepe and about 1/2 cup Boursin. It just sounds good. Other Boursin recipes and ideas to try: Boursin Garlic & Fine Herbs Cheese, Boursin Mushroom Appetizer, Boursin Pimento Cheese.
Bacon Boursin Pasta
Ingredients
- 2 TBSP butter
- 1 large onion, thinly sliced
- 1 1/2 cups cooked and crumbled bacon*
- 1 cup frozen peas or cooked, chopped fresh asparagus
- 1 cup Garlic & Fine Herbs Boursin (regular or non-dairy)
- 1/2 lb pasta, cooked, and 1 cup cooking liquid reserved
- Salt and pepper
Instructions
- In a large skillet, melt butter over medium heat. Stir in onions. Cook until onions are translucent.
- Stir in bacon and peas. Heat thoroughly.
- After you reserve some pasta water, and drain the pasta, pour 1/2 cup of the pasta water back to the pasta pan. Stir in the Boursin. Melt the Boursin completely.
- Add the onion bacon mixture to the melted Boursin.
- Toss in the pasta and some salt and pepper. Add more pasta water, if the sauce needs to be thinned a little.
- Enjoy with some garlic bread.
- Other additions: sautéed mushrooms, artichoke hearts (not marinated)
- *Instead of bacon you could use diced speck (ham) or pancetta, or thinly sliced and diced smoked ham would also work
I love Boursin…can’t wait to try this. Will probably add fresh spinach also to get more veggies!
