Sometimes, I add a simple shrimp salad to make this appetizer even more special.
Bacon Jalapeno Cracker Appetizers
Ingredients
- Club crackers
- Slivers of jalapeños, seeds removed
- Thin bacon, cut in half
- Brown sugar
- To make these yummy bites even more delicious, make a quick shrimp salad.
- 1-2 lbs medium shrimp
- 1/4-1/2 cup mayonnaise
- 2 TBSP asian sweet chili sauce
- All purpose seasoning

Instructions
- Heat oven to 250,
- Place a sliver of jalapeño on each cracker.
- Wrap cracker and jalapeño with half slice of bacon.
- Place seam side down on parchment lined bacon sheet.
- Sprinkle bacon with a pinch of brown sugar.
- Bake about 1 1/4 hrs or until they look like little bow ties.
- Make a lot, because they disappear quickly.
- Cook shrimp, or buy cooked shrimp (no tail). Drain and pat dry.
- Mix mayo and sweet chili sauce. Toss with shrimp. Season to taste.
- Guests can place one shrimp on each bacon wrapped cracker, for the absolute best bite.
