A delicious spin on the Baked Mahi Mahi recipe, Baked Fish Topped with Shrimp and Bacon got a “two thumbs up,” in our house. Don is very picky about his fish, so I have to invent new ways to prepare it. When I dream about yummy food, this is on the short list!
Baked Fish Topped with Shrimp and Bacon
Ingredients
- 2 lbs fish fillets (I used thick white fish fillets)
- 1/2 lemon
- 2 TBSP extra virgin olive oil
- 1/2 cup cooked, crumbled bacon
- 1/2 cup onion, chopped
- 2 cloves garlic, pressed
- 1 cup fresh breadcrumbs or Panko
- 1/4 cup chopped cilantro or parsley
- 2-3 TBSP capers
- 1/2 cup diced tomatoes (if you use canned, drain them)
- Salt and pepper
- 1 1/2-2 lbs small cleaned raw shrimp, or chopped larger shrimp
- Mayonnaise
Instructions
- Heat oven to 400°.
- Pat fish fillets dry, and lay in greased baking pan. I drizzled extra virgin olive oil in bottom of pan.
- Squeeze 1/2 lemon over fish.
- Heat olive oil in a skillet over medium heat.
- Add bacon and onion.
- When the onion starts to soften, add garlic.
- When onion is translucent, remove from heat and add breadcrumbs, cilantro, capers, tomatoes, and salt and pepper. Toss to combine.
- Add shrimp, and combine.
- Add enough mayonnaise to just hold mixture together.
- Top fish with mixture.
- Bake about 20 minutes until fish and shrimp are cooked.
