Basil Shrimp
This is an amazing and easy main dish or appetizer.
Ingredients
- Extra large shrimp
- Extra virgin olive oil
- Lots of pressed or minced garlic
- Lots of chopped fresh basil and/or fresh oregano
- Sea salt (good grade)
- Freshly ground pepper
Instructions
- Remove legs from shrimp. Split the shrimp in half lengthwise (I left the shell on). It's easier to cut them from the side where the legs were. Lay them, cut-side up, on a greased baking sheet.
- Drizzle the shrimp with oil, sprinkle with garlic, herbs, salt and pepper. Reserve some of the fresh herbs to sprinkle on after cooking.
- Leave pan in the refrigerator for about an hour, to allow the shrimp to marinate, before cooking.
- Broil for 5 - 8 minutes (depends on size of shrimp), until shrimp is cooked.
