You remember those BBQ ribs and greens we had the other night, click here. Well, Don decided fried rice would be good with the leftovers. Just a word, never underestimate the power of using leftovers in fried rice, it’s awesome. I was skeptical of the BBQ ribs, but it was amazing in the fried rice. Don’t be nervous about trying any kind of leftovers in fried rice, because you can make it work. Are there times you might fail? Sure, but that’s all part of the process. I’ll give you my recipe / formula – it always includes fresh ginger, garlic (fresh or powder), soy or tamari, and sesame oil – and you’re golden! The amount of all ingredients are up to you.
Ingredients
- Extra virgin olive oil
- Leftover BBQ pork, chopped
- 1 TBSP finely chopped fresh ginger
- Leftover greens, chopped (see link to recipe above)
- Cooked brown rice (or rice of your choice)
- Green onions, chopped (or use granulated onion powder, fair amount)
- Granulated garlic powder (or fresh garlic, minced)
- Ground coriander
- Sesame oil
- Tamari or soy sauce
- Chopped cilantro
- Red pepper flakes, or chopped fresh hot pepper
Instructions
- Start with 3 TBSP oil, heated in a large skillet, add more as needed.
- Add pork and ginger. Cook for a few minutes.
- Add greens and rice. Stir well, breaking everything up.
- Add onions and all seasonings. Drizzle the sesame oil and soy sauce, and taste. Add seasoning as needed.
- Serve topped with chopped cilantro.
- There is no science to this. Add seasonings to taste. Above all, don't be nervous, it's a great go-to recipe!
I used baked brown rice in this recipe. Alton Brown’s Baked Brown Rice recipe is perfect, because it’s so good and so easy. So, here it is –
Ingredients
- 1 1/1/2 cups medium or short grain brown rice
- 2 1/2 cups water
- 1 TBSP unsalted butter
- 1 tsp kosher or sea salt
Instructions
- Heat oven to 375.
- Place rice in an 8" square, greased baking pan.
- Bring water, butter, and salt just to a boil in a pan.
- After the water breaks a boil, pour over the rice, stir to combine, and cover dish tightly with foil. Bake for 1 hour.
- Remove, and fluff rice.
