The world of quesadillas meets BBQ. I haven’t seen much I won’t put in a quesadilla. This week we have a lot of BBQ from the fire department dinner. I used to make quesadillas using two tortillas, but I’ve found it’s much easier to use one tortilla and fill half, then fold it. It’s like making a grilled taco.
BBQ Quesadilla
Ingredients
- Tortillas ( I use Don Pancho's wholewheat)
- Cream cheese
- BBQ beans, drained and mashed
- BBQ meat, diced
- Chopped onions
- Chopped dill pickles
- Chopped cilantro
- Grated cheese
- Butter
Instructions
- Spread half of each tortilla with cream cheese.
- Layer all ingredients (except butter) onto the half spread with the cream cheese. I do it in the order listed.
- Heat a large skillet, melt some butter in the bottom.
- Grill the quesadillas until brown and crispy on both sides.
