This is a Lovejoy family recipe, that’s really delicious, easy, and perfect for Cinco de Mayo. I made some very slight changes, because you know I just can’t help myself!
Bean Chalupas (Slow Cooker)
This recipe is a complete meal, and one you're going to want to make on a regular basis.
Ingredients
- 1 lb pinto beans, soaked overnight and drained
- 3 lbs pork roast
- 7 cups water and/or broth (beef)
- 1/2 cup chopped onion
- 3 cloves garlic, pressed
- 2 TBSP chili powder
- 1 TBSP cumin
- 1 TBSP salt
- 1 TBSP smoked paprika (optional)
- 2 tsp ground coriander
- 1 tsp dried oregano
- 1 (7 oz) can green chiles
- 1 jar diced pimento
- Tortillas or tortilla chips
- Shredded cheese
- Avocado, sliced or diced
- Green onions, sliced
- Shredded lettuce
- Diced tomato
- Picante sauce
- Lime wedges

Instructions
- Put all chalupa ingredients in the slow cooker and cook on low 8-10 hours, or until everything is done. When done, take out, shred, and return to the pot.
- Serve with extras.
