We love good refried beans as a side, in burritos, on nachos, in casseroles………. So, I decided to make the best refrieds that I could imagine. And if the response to my latest recipe is any indication, even people that don’t particularly like refried beans, get seconds of Beefy Refried Beans. Beef, dairy, and bacon elevate this humble dish to the next level. While you could use refried pinto beans, I urge you to try Mayocoba beans. We like their flavor, more than pinto.
Beefy Refried Beans
Ingredients
- 2 TBSP extra virgin olive oil or bacon drippings
- 1 lb 80/20 ground beef
- 3 (15.2 oz) pouches Refried Mayocoba Beans (or refried pinto beans)
- 1 tsp granulated garlic powder
- 1 tsp granulated onion powder
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/2 tsp dried oregano
- 1/2-3/4 cup sour cream
- Salt and pepper, Frankly Delicious, or your favorite all purpose seasoning
- 1 cup shredded cheddar, Monterey Jack, or Mexican cheese
- 1/2 cup cooked and crumbled bacon
Instructions
- Heat oven to 350 degrees.
- In medium to large saucepan, heat oil and add ground beef. Cook and crumble meat, until browned.
- Stir in beans and next seven ingredients until well combined. Sometimes I use part of a pouch of taco seasoning, instead of the individual spices.
- Spread bean mixture into a greased baking pan, top with cheese and bacon.
- Bake until cheese melts 20-30 minutes.
