We’re getting great crops of all things green, from the greenhouse. However, in addition to the greens, I want some other veggies. While shopping in my pantry, I found some organic jellied cranberry sauce that I bought. And for some reason, I immediately connected it to the luscious organic sweet beets that I buy at Costco. With a couple other ingredients, a delicious spring dish happened – Beet Cranberry Salad.
Beet Cranberry Salad
Ingredients
- Beets
- Extra virgin olive oil
- Aged balsamic vinegar
- Dried thyme leaves
- Salt and pepper
- Jellied cranberry sauce, cut into bite-size chunks
- Crumbled feta
- Crushed pecans or walnuts
- Extra virgin olive oil or a nut oil
- Peach, fig, or other fruit balsamic vinegar
- Salt and pepper
Dressing
Instructions
- Heat oven to 375.
- Cut beets into bitesize chunks. Place in baking pan. Amount of beets and cranberry sauce should be about equal.
- Drizzle with oil and a little vinegar. Sprinkle with thyme, salt, and pepper.
- Toss beets to coat well.
- Roast for about 30 minutes.
- Place cooled beets in bowl with cranberry chunks, feta, and nuts.
- Drizzle on dressing.
