Black Bean Baby Corn Salad
Ingredients
- 1 can (15-1/4 oz) baby corn, drained
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup finely chopped tomatoes
- 2 small avocados, pitted, peeled, and cut into small chunks
- 2/3 cup minced fresh cilantro
- 1/2 cup frozen corn, defrosted
- 1/2 cup chopped celery
- 1 onion, finely chopped
- 2 garlic cloves, pressed
- Minced jalapeno, optional
- 2 TBSP honey
- 2 TBSP white wine vinegar
- 2 TBSP extra virgin olive oil
- 1 TBSP lime juice
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- Salt & pepper
