I came home from the grocery store the other day with some large mushrooms, and some Boursin garlic and fine herb cheese. Some of the mushrooms I sliced and sautéed. Then mixed them with Boursin, and baked them. Then, topped them with smoked oysters. However, you could use smoked salmon, cooked bacon, or cooked beef filet. With three ingredients, you have an easy and delicious Boursin Mushroom Appetizer. It makes a great side dish, without a topping, so just two ingredients.
Some of the mushrooms I left whole and stuffed. The picture is of the sautéed mushrooms and Boursin (topped with oysters). However, the whole mushrooms, stuffed with Boursin were really good. I told Don to top them with a smoked oyster, and before I got a picture, they were gone.
Ingredients
- Mushrooms, sautéed in butter
- Boursin Garlic and Herb cheese
- Optional - smoked oysters, smoked salmon, cooked bacon, chunks of cooked beef filet
Instructions
- Mix mushrooms with Boursin. Place in small baking dish.
- Bake at 350 for about 15 minutes, or until bubbly.
- Top with smoked salmon or oysters, cooked bacon, or beef filet. Or leave plain and use as a side dish.
- For whole stuffed mushrooms - remove stem, salt inside of mushroom cap. Let sit for a few minutes to draw out moisture. Heat oven to 350. Flip mushroom caps upside down on baking pan. Bake for about 10 minutes, until liquid comes out of mushrooms. Blot dry. Fill with Boursin and bake (cheese-side up) for about 15 minutes, until heated through.
