Breakfast Crostini

OK, it’s just easy, fancy cheese toast – the perfect, power, protein way to start your day – deliciously.  There’s lots of additions and substitutions that you can make, like using cream cheese instead of yogurt, other nuts, or other fresh or dried fruits.  I used to make a breakfast sandwich with cream cheese, dates, and walnuts – and that’s not a bad way to get going!

Ingredients

  • Good sourdough or whole grain bread, toasted
  • Vanilla Greek yogurt
  • Goat cheese crumbles
  • Broken walnuts, raw or toasted
  • Slices of avocado or mango (optional)
  • Drizzle of honey

Instructions

  1. Spread yogurt on toast. Top with the rest of the ingredients and drizzle with honey.
  2. Breakfast is ready!
