If you’re looking for a great summer salad, this Cabbage Salad is a delicious, crunchy addition to a Mexican or Asian meal.
Cabbage Salad
Ingredients
- 1/4 cup avocado oil
- 1/4 cup apple cider vinegar
- 3 TBSP chunky all natural peanut butter
- 1 TBSP maple syrup
- 1 TBSP toasted sesame oil
- 3/4 tsp sea salt
- 1/2 tsp granulated garlic powder
- 4-6 cups chopped or shredded red cabbage
- 6 mini red bell peppers, cleaned and thinly sliced
- 1 cup julienned carrots
- 1/2 cup chopped fresh cilantro
- Garnish with chopped green onions
Instructions
- In a large bowl, whisk together the first 7 ingredients.
- Place the rest of the ingredients (except garnish) in the bowl and toss well.
- Put salad in fridge for one hour, before tossing again and serving.
- Other additions: hot sauce or chopped chiles, sliced almond or pepita garnish, drizzle of Bachan’s Original Japanese Barbecue Sauce
