Our new summer meal addition is Caprese Caesar Salad. It has a bit of deliciousness for everyone’s taste. There’s not much of a recipe, other than some assembly. You can certainly make your own Caesar salad, or use a pre-packaged variety.
Caprese Caesar Salad
Ingredients
- 1 large clove garlic, peeled and cut in half
- 2-4 TBSP extra virgin olive oil
- 16-20 (1/4”) slices ripe tomatoes
- Salt & pepper
- Sugar, optional
- 16-20 fresh basil leaves (one for each tomato slice)
- 16-20 whole milk mozzarella slices
- 9-16 oz Caesar chopped salad kit
- 2 TBSP bacon bits
- 1 TBSP grated Parmesan or Romano
- Slices of avocado, optional
- 1/2 lemon
Instructions
- Rub the inside of a large bowl with the cut side of the garlic. Pierce each garlic half with a toothpick. Leave garlic in the bowl. Having toothpicks in the garlic makes them easier to remove.
- Pour oil into bowl.
- Add tomato slices to the bowl, along with salt and pepper. The number of slices should be enough to cover the perimeter of your platter. If the tomatoes do not have quite enough flavor, sprinkle with very little sugar. Toss the tomatoes to coat them with the oil. Leave them marinating in the oil, tossing every few minutes.
- On a large platter, assembly the Caprese part of the salad. Lay the tomato slices around the entire perimeter. Place 1 slice of mozzarella and 1 basil leaf on each tomato slice.
- Mix Caesar salad with bacon bits and Parmesan. Spoon onto a small platter and place it in the center of the platter with the tomatoes.
- Drizzle avocado slices with lemon, then arrange them on top of the Caesar salad.
- Serve with fresh bread.
