Good for breakfast, lunch, or dinner, egg dishes are always a staple in our house. I smoked a huge head of cauliflower this week, and decided to use some of it to make Cauliflower Bacon Frittata. It’s such a simple and delicious meal, and perfect for summer. Of course, you don’t have to smoke the cauliflower, but make sure you season it well, when you cook it. Cauliflower Bacon Frittata
Ingredients
- 4 slices bacon (or use ham)
- 2 cups cooked, seasoned cauliflower, broken into small pieces
- 4 eggs, scrambled
- Salt and pepper
- 1-1 1/2 cups shredded cheese
Instructions
- In a medium skillet, cook the bacon until crisp. Remove and leave fat in skillet. You need about 2 TBSP of fat. If you need more, add butter and/or extra virgin olive oil. Dice the bacon and set aside.
- Heat skillet on medium low. Add cauliflower and cook for a couple minutes. Stir in bacon.
- Season scrambled eggs with salt and pepper. Pour gently around the pan to cover all the cauliflower and bacon. Cover skillet, and let cook a couple minutes.
- Place cheese on top, and leave covered, until cheese melts and eggs are set. If the bottom is browning too much for the way you like it, but eggs aren’t set, uncover and place under broiler for a couple minutes until done.
