For an easy, delicious meal, we love casseroles. Great for brunch, lunch, or dinner, Cheesy Chicken Broccoli Casserole is simple and yummy. While it’s good on it’s own, buttered noodles or rice or garlic bread pair well with it.
I’ve heard there are people that don’t like casseroles. (Are they the same people that don’t eat leftovers?) So, if I make creamy chicken with cheesy broccoli on the side, these people will eat it. But, if I put them together in a delicious casserole, it’s no bueno. Take a couple deep cleansing breaths and let it go! I looked, and sure enough, there’s a support group called picky eaters anonymous!
Cheesy Chicken Broccoli Casserole
Ingredients
- 1/2 stick butter
- 1 onion, chopped
- 2 eggs
- 12 oz cream of chicken soup
- 1/2 cup cream or sour cream (more if needed)
- 1/2 cup mayonnaise
- Salt & pepper or all purpose seasoning
- 1 tsp smoked paprika (optional)
- 1 lb frozen broccoli florets, steamed
- 4 chicken breasts, baked and chopped in cubes, or 4 cups shredded rotisserie chicken
- 12 - 16 oz Monterey Jack cheese, grated
- 1 - 1 1/2 cups crushed Ritz type crackers or container Crispy Fried Onions
Instructions
- Heat oven to 350
- In a medium skillet, sauté onion.
- In casserole dish, whisk eggs. Then whisk in soup, cream, mayo, and seasoning.
- Add broccoli, chicken, cheese, and sautéed onions to liquid and combine well.
- Top with cracker crumbs.
- Bake for 1/2 hour or until bubbly and crackers are browned. If you use Crispy Fried Onions, don’t put them on top, until the last 5 minutes of cooking. Let sit 15 minutes, before serving.
- Serve alone or over buttered rice or noodles, or with garlic bread.
- Other additions: mushrooms, cooked and crumbled bacon, or small cubes of cream cheese.
