Cheesy Ham, Potato, Broccoli Casserole
Ingredients
- 1/3 cup butter
- 1 small onion, chopped
- 1 pkg (5.2 oz) Boursin Fine Herbs & Garlic
- 1 cup sour cream (or 1/2 cup sour cream and 1/2 cup mayo)
- 2 TBSP Dijon mustard
- 2 lbs potatoes, cooked then diced
- 2-3 cups diced ham
- 1lb frozen broccoli florets, defrosted
- 1 1/2 cups shredded Swiss cheese
- Salt & pepper
- 1 tsp granulated garlic powder
- 1 cup shredded cheddar, Mexican blend, or Monterey Jack
Instructions
- Heat oven to 350. Grease a 9x13 baking dish.
- Melt butter in a skillet. Add onion and cook until translucent. Turn off heat.
- In a large bowl, melt Boursin. Stir in sour cream and Dijon. Stir in potatoes, ham, and onions. Toss in broccoli, Swiss cheese, salt & pepper, and garlic powder. (If the bowl isn’t big enough place the broccoli in the bottom of the baking dish.) Place potato mixture in the baking dish, and scatter the top with shredded cheddar cheese.
- Bake for 1/2 hour or until bubbly and cheese is melted. Let rest 10 minutes, before serving.
