If you’re still looking for ways to use chicken this week, because it’s on special, try this fried rice. It’s a quick, easy, and delicious supper. You can find the sesame oil in the Asian section of the grocery store.
Chicken Fried Rice
Ingredients
- 2 TBSP peanut or canola oil
- 1 bunch green onions, chopped, including green
- 1 TBSP fresh ginger, finely chopped
- 1 TBSP fresh garlic, finely chopped
- 4 cups cooked rice
- 1/2 - 1 cup frozen peas and carrot combination
- 2 cups cooked chicken, pieced up
- 3 scrambled eggs, cooked and pieced up (optional)
- 2 TBSP soy sauce or tamari
- 1 - 2 tsp toasted sesame oil
- 1/2 tsp ground coriander (optional)
- Pepper
- 3 green onions, chopped, including green
- 1/4 cup chopped cilantro
Instructions
- Heat oil in a large skillet over medium-high heat. When hot add onions, ginger, and garlic stirring constantly. Continuing stirring and cooking until onions turn slightly limp
- Add rice, cook and stir for a minute
- Stir in peas and carrots and cook for a minute
- Stir in chicken and egg, drizzle with soy sauce and sesame oil, and sprinkle on coriander and pepper. Stir and heat all ingredients through.
- Serve garnished with chopped green onions and cilantro
- *Notes: There are lots of additions and substitutions with fried rice. It's a great leftovers meal. Use cooked shrimp instead of chicken. Use cooked fresh green beans instead of peas and carrots. Add fresh or frozen corn, sautéed mushrooms, wilted spinach, or sautéed squash. Try grating the garlic and ginger to make it go faster, or use a garlic press.
