Soup is at the top of our menu list for 2 weeks now. Not only is it an ultimate comfort food, it’s a pretty versatile meal in our house, and never boring. The Instant Pot that I got for Christmas is working overtime these days! However, soup is easy to make on the stovetop or in a slow cooker. Chicken sausage soup is a delicious way to spice up dreary days. I used spicy sausage, chicken, cannellini beans, carrots, celery, onion, garlic, green beans, potatoes, rice noodles, mushrooms, and a variety of spices. I don’t limit flavor possibilities. Also, I added lots of chopped ginger, sesame seasoning, a little fish sauce, and sesame oil.
One of our soups last week had (carrots, celery, onion, garlic), leftover meatloaf, leftover roasted pork, tomatoes, wide rice noodles, bean sprouts, mushrooms, thyme, and lots of seasonings. Sometimes I mix bases of chicken and beef, or use them singly. I’ve been using rice options as a carbohydrate, but corn or pasta are always contenders. I load soups with vegetables to make them one dish meals.
