This is one of the best chimichurri sauces I’ve made. It’s fantastic drizzled on any kind of meat. It’s also good to use part of the sauce to marinate the meat in, then grill it. Then serve the meat with the reserved sauce.
Chimichurri Sauce
Ingredients
- 1 cup (chopped & packed) fresh Italian parsley
- 2 cups (chopped & packed) fresh cilantro
- 1/2 cup extra virgin olive oil
- 3 TBSP balsamic vinegar
- 2 TBSP chopped fresh oregano leaves
- 3 garlic cloves, pressed
- 1 teaspoon ground cumin
- 1/2 teaspoon dried crushed red pepper
- 1/2 teaspoon salt
Instructions
- In food processor, combine all ingredients well. Add enough oil to give the sauce a little looseness for flow. Adjust seasoning.
