Chocolate Chip Zucchini Bread (Gluten Free)

Ingredients
- 1/2 cup canola oil
- 1 cup sugar
- 2 eggs
- 2 tsp vanilla
- 1 1/2 cup grated zucchini
- 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp cinnamon
- 1/2 tsp salt
- 1 cup gluten free flour mix
- 1/2 cup cocoa powder
- 1 tsp xanthan gum*
- 1 cup chopped nuts
- 1 cup chocolate chips
Instructions
- Preheat oven to 350.
- Mix together oil, sugar, eggs, vanilla and zucchini. Set aside
- Mix together the dry ingredients. Then combine with sugar mixture.
- Mix in the nuts and chocolate chips.
- Bake for 50 to 60 minutes.
- Note: *Xanthan gum helps create the structure of the bread, It's available in natural food stores, or in health food sections of some grocery stores (like HEB).
