While I’ve done quite a few popper recipes, I really wanted to try a couple new and interesting fillings. Chorizo Pimento Cheese Poppers are one of two I made for a little Cinco De Mayo party. Quick and easy, they are a great side or appetizer.

Chorizo Pimento Cheese Poppers
Ingredients
- Jalapeño peppers
- 4-8 oz softened cream cheese
- 1/2-1 cup pimento cheese
- 2 chorizo sausages cooked and diced finely
- Smoked paprika
Instructions
- Halve the jalapeños, and remove the seeds and veins.
- In a small bowl mix together the next 3 ingredients.
- Fill each jalapeño half with the cheese mixture, and sprinkle with paprika.
- Leave in fridge until ready to bake.
- Heat oven to 375. Bake for 15-25 minutes, depending on how well done you like them.
