Christmas Dinner

This year, Don cooked Christmas dinner, and I was thrilled.  First he went to the coast and caught the redfish (no joke), the weekend before Christmas. He decided to blacken it, and sear it in butter.

We decided on some simple sides.  There’s a little lettuce and arugula in the garden, so we had a salad.  I had made some blue cheese dressing recently, actually it’s gorgonzola.  So, we had baked potatoes with gorgonzola dressing.  And I don’t want to forget to tell you, I cooked up a little of the pork belly we got from Epps Farm, and it’s scrumptious.  It has kind of a buttery quality.
