Citrus Shrimp Salad
Ingredients
- 4 TBSP fresh lime juice
- 4 TBSP fresh orange juice
- 2 TBSP seasoned rice vinegar
- 1 TBSP toasted (dark) sesame oil
- 1 TBSP fish sauce
- 1 tsp tamari or soy sauce
- 1/4 tsp red pepper flakes
- 1 lb cooked (cleaned) shrimp (or substitute chicken)
- 1 red pepper, julienned
- 2 carrots, julienned
- 4 green onions, sliced
- 3 TBSP sesame seeds
- 2 TBSP roasted peanuts, chopped
- 1/4 cup mint leaves, chopped
- 1/4 cup cilantro leaves, chopped
- 2 TBSP basil leaves, chopped
- 2 cups cooked soba or rice noodles

Instructions
- In a large bowl, combine all dressing ingredients.
- Add all salad ingredients.
- Toss and serve.
