Coconut Rice
Great with Coconut Chicken
Ingredients
- 2 cups unsweetened coconut milk
- 2 cups water (or chicken broth)
- 2 thin slices fresh ginger, peeled
- 2 bay leaves
- 2 Tablespoons cilantro, minced
- 11/2 teaspoons kosher salt
- Pepper
- 2 cups jasmine rice, rinsed
Instructions
- Place all ingredients, except for rice, in a large saucepan.
- Bring to a boil over medium-high heat.
- Stir in rice, cover, and reduce heat to low.
- Cook until the liquid is absorbed and the rice is tender – about 20-25 minutes.
- Remove bay leaf and ginger slices and serve.
- Other additions: Hot sauce, basil, mint, garlic, and toasted unsweetened shredded dried coconut
