Coconut Rice

Great with Coconut Chicken.

Coconut Rice

Yield: 8-10 Servings

Great with Coconut Chicken

Ingredients

  • 2 cups unsweetened coconut milk
  • 2 cups water (or chicken broth)
  • 2 thin slices fresh ginger, peeled
  • 2 bay leaves
  • 2 Tablespoons cilantro, minced
  • 11/2 teaspoons kosher salt
  • Pepper
  • 2 cups jasmine rice, rinsed

Instructions

  1. Place all ingredients, except for rice, in a large saucepan.
  2. Bring to a boil over medium-high heat.
  3. Stir in rice, cover, and reduce heat to low.
  4. Cook until the liquid is absorbed and the rice is tender – about 20-25 minutes.
  5. Remove bay leaf and ginger slices and serve.
  6. Other additions: Hot sauce, basil, mint, garlic, and toasted unsweetened shredded dried coconut
