Coconut Seafood
Part of my travel recipe collection.
Ingredients
- Fish, scallops, or shrimp
- Lemon or lime
- Broth
- Coconut milk
- Butter (1 pat)
- Salt and pepper
- Italian spices
Instructions
- Place seafood or fish in a bowl.
- Squeeze lemon or lime over it.
- Pour in a little broth and coconut milk.
- Place a pat of butter in the center.
- Sprinkle on salt, pepper, and spices.
- Cover and microwave until the fish is cooked.
- Notes: I usually get butter pats from the hotel breakfast bar or if I go to a restaurant. You could easily cook a vegetable like broccoli in the broth and coconut milk before you add the fish. Serve with cooked rice or noodles or bread. You can find frozen rice, or buy a side at a restaurant.
