Cod with Cilantro Butter

How about some fish to start out this week’s specials.  Wild fish and seafood are good to have at least once a week.  Cod is a really good price and would be good with this recipe, or you could use the Baked Mahi Mahi recipe, or the Coconut Milk Chicken recipe.  It’s a really versatile fish and is delicious as long as it doesn’t dry out during cooking.

Cod with Cilantro Butter

Ingredients

  • 1 stick butter
  • 1/2 cup fresh cilantro
  • 1/4 cup salted pumpkin seeds (pepitas) or sunflower seeds, crushed
  • 2 TBSP fresh lime juice
  • 4 tsp minced jalapeno
  • 2 tsp honey
  • 1 1/2 tsp ground coriander
  • 16 oz cod fillets, patted dry
  • juice of 1/2 lime
  • salt and pepper

Instructions

  1. Heat oven to 400°.
  2. In a small saucepan melt butter and add cilantro, seeds, 2 TBSP lime juice, jalapeno, honey and coriander. Mix well.
  3. Place fish fillets in a greased baking dish. Squeeze lime over fish and sprinkle with salt and pepper.
  4. Spread cilantro butter mixture completely over the top of each fillet.
  5. Bake 10 – 15 minutes until fish is cooked.
