How about some fish to start out this week’s specials. Wild fish and seafood are good to have at least once a week. Cod is a really good price and would be good with this recipe, or you could use the Baked Mahi Mahi recipe, or the Coconut Milk Chicken recipe. It’s a really versatile fish and is delicious as long as it doesn’t dry out during cooking.
Cod with Cilantro Butter
Ingredients
- 1 stick butter
- 1/2 cup fresh cilantro
- 1/4 cup salted pumpkin seeds (pepitas) or sunflower seeds, crushed
- 2 TBSP fresh lime juice
- 4 tsp minced jalapeno
- 2 tsp honey
- 1 1/2 tsp ground coriander
- 16 oz cod fillets, patted dry
- juice of 1/2 lime
- salt and pepper
Instructions
- Heat oven to 400°.
- In a small saucepan melt butter and add cilantro, seeds, 2 TBSP lime juice, jalapeno, honey and coriander. Mix well.
- Place fish fillets in a greased baking dish. Squeeze lime over fish and sprinkle with salt and pepper.
- Spread cilantro butter mixture completely over the top of each fillet.
- Bake 10 – 15 minutes until fish is cooked.
