Cooking and Eating Well

I’m watching a little UCTV these days (University of California), and they’ve had some really interesting integrative medicine approaches to cancer.  One of the things that stuck in my mind was about medicinal effects of mushrooms (OK people, it’s regular, not “funny” mushrooms!).  I was surprised to hear you should always cook mushrooms; don’t eat them raw.  Dr. Weil has some good information about them and uses information from Dr. Abrams of UC, click here to read.

In addition, Dr. Abrams had some good information about omega 3 and omega 6.  Because of the way chicken, pigs, and cattle are being feed, the amount of omega 6 in butter, eggs, pork, beef, and chicken has increased dramatically.  Omega 6 increases inflammation in the body.  He said butter, eggs, and chicken are the worst as far as omega 6 being dramatically increased.  And when we buy eggs, we should be buying omega 3 eggs.  Without a good balance of omega 3 and omega 6, it sets the body up for disease.  For a good, short article about this, click here.   I’m still looking for a good source of omega 3, to bump up my levels.  Fish oil capsules usually contain soy oil (I’m not a fan of soy), so I’m thinking flax oil might be what I look at seriously.  Flax oil should be refrigerated when you buy it and should be kept refrigerated at home.  You have to grind flax seed to get omega 3 benefit from it.  It’s not good to buy it ground, because unless flax is in a seed form, it’s highly perishable.

There’s some good information on B-12 from a recent Dr. Oz.  Deficiencies are much more prevalent than I thought, and much more damaging.  Once again our food supply is not what it used to be, so easier to develop a deficiency.  Click here, for the article.
