Since it’s really cold weather and icy, I’m in the kitchen trying some new recipes. Every once in a while, I’m interested in state fair food. Corn dog muffins are a simple remake on corn dogs. They are delicious on their own, for brunch. Or, serve them with a bowls of beans!
Corn Dog Muffins
Ingredients
- 2 boxes “Jiffy”®️ Corn Muffin mix
- Cooked cocktail weenies or hot dogs, sliced
- Shredded cheese
- Chopped jalapeños
- Dijon mustard, about 1 TBSP (optional)
Instructions
- Heat oven to 400.
- Mix corn muffins according to package instructions.
- Add the rest of the ingredients, in quantities that you like. Stir well.
- Place corn dog batter in greased muffin tins.
- Bake about 20-25 minutes until golden.
