For a great addition to your homemade Tex-Mex meals, Corn Salad is the perfect side. It combines the freshness of veggies with the irresistible crunch of Frito corn chips.
Corn Salad
Ingredients
- 2 cups fresh or frozen (defrosted) super sweet corn kernels*
- 1 cup diced orange and/or green bell pepper
- 1/2 medium purple onion, diced
- 1 cup mayonnaise
- 1 cup shredded cheddar cheese
- 5 oz chili cheese Frito corn chips
- Salt & pepper
Instructions
- Mix all ingredients, except corn chips.
- Add corn chips, right before serving.
- Other additions: crumbled bacon, diced chicken, or beans. If you add ingredients, make sure to add a little extra mayonnaise.
- *If using corn on the cob, just cut the kernels off to put in the salad. For added flavor, grill the corn first.
