Country Pork and Potatoes (Slow Cooker)

Country Pork and Potatoes (Slow Cooker)

Ingredients

  • 4 slices bacon, diced
  • 4 thick pork chops
  • 1 1/2 lbs potatoes, thinly sliced
  • 1 onion, sliced
  • 2 cloves garlic, chopped
  • 10-12 sage leaves
  • 1 TBSP fresh rosemary leaves (more if you like the flavor)
  • 1 cup white wine
  • 1/2 cup gin
  • 1/2 cup chicken broth
  • 1 heaping TBSP dijon mustard
  • Salt and pepper

Instructions

  1. In a large skillet, cook bacon until crisp, remove and set aside.
  2. Season pork chops with salt and pepper and fry in the bacon grease, about 3 minutes a side. When they're done, deglaze pan with the gin or some of the wine, and reserve.
  3. In the bottom of a slow cooker place half of the potato slices and half the onion slices. Sprinkle with salt and pepper and some of the rosemary leaves.
  4. Lay the chops on top of the potato / onion layer. Over the chops, scatter the cooked bacon, chopped garlic, and sage leaves.
  5. Lay the rest of the potatoes and onions on top of the chops. Sprinkle with salt and pepper and the rest of the rosemary leaves.
  6. Pour the wine, gin, and the juice from the deglazed pan over everything.
  7. Mix the broth and mustard together and pour over everything.
  8. Cover and cook on low about 4 hours or until everything is done.
