Country Pork and Potatoes (Slow Cooker)
Ingredients
- 4 slices bacon, diced
- 4 thick pork chops
- 1 1/2 lbs potatoes, thinly sliced
- 1 onion, sliced
- 2 cloves garlic, chopped
- 10-12 sage leaves
- 1 TBSP fresh rosemary leaves (more if you like the flavor)
- 1 cup white wine
- 1/2 cup gin
- 1/2 cup chicken broth
- 1 heaping TBSP dijon mustard
- Salt and pepper
Instructions
- In a large skillet, cook bacon until crisp, remove and set aside.
- Season pork chops with salt and pepper and fry in the bacon grease, about 3 minutes a side. When they're done, deglaze pan with the gin or some of the wine, and reserve.
- In the bottom of a slow cooker place half of the potato slices and half the onion slices. Sprinkle with salt and pepper and some of the rosemary leaves.
- Lay the chops on top of the potato / onion layer. Over the chops, scatter the cooked bacon, chopped garlic, and sage leaves.
- Lay the rest of the potatoes and onions on top of the chops. Sprinkle with salt and pepper and the rest of the rosemary leaves.
- Pour the wine, gin, and the juice from the deglazed pan over everything.
- Mix the broth and mustard together and pour over everything.
- Cover and cook on low about 4 hours or until everything is done.
