Creamy Broccoli Rice Bake
Ingredients
- 1/4 cup butter
- 1 medium onion, diced
- 1 rib celery, diced
- 3 oz cream cheese
- 5.2 oz Boursin cheese (shallot or garlic flavor)
- 12 oz organic cream of chicken soup
- 12 oz organic cream of mushroom soup
- Granulated garlic powder
- Salt and pepper
- 6 cups cooked brown rice
- 32 oz frozen broccoli florets, cooked
- Shredded cheese
Instructions
- Melt butter in a skillet. Add onion and celery. Cook until onion is translucent.
- Stir in cream cheese and Boursin, cut in pieces. Cook and str until cheese starts to melt.
- Stir in both soups. Stir in salt and pepper. Continue cooking until cheese is melted and everything is combined well. Taste for seasoning.
- Transfer to large bowl. Stir in rice. Fold in broccoli.
- Place in greased baking dish. Top with cheese..
- Bake in 350 oven for about 1/2 hr or until bubbly.
