Creamy Broccoli Rice Bake

It’s never too late to remake some old favorite recipes.   Creamy Broccoli Rice Bake is a delicious take on broccoli rice casserole.  For fish or meat, this is a perfect side dish.

Creamy Broccoli Rice Bake

Total Time: 45 minutes

Yield: 12

Ingredients

  • 1/4 cup butter
  • 1 medium onion, diced
  • 1 rib celery, diced
  • 3 oz cream cheese
  • 5.2 oz Boursin cheese (shallot or garlic flavor)
  • 12 oz organic cream of chicken soup
  • 12 oz organic cream of mushroom soup
  • Granulated garlic powder
  • Salt and pepper
  • 6 cups cooked brown rice
  • 32 oz frozen broccoli florets, cooked
  • Shredded cheese

Instructions

  1. Melt butter in a skillet. Add onion and celery. Cook until onion is translucent.
  2. Stir in cream cheese and Boursin, cut in pieces. Cook and str until cheese starts to melt.
  3. Stir in both soups. Stir in salt and pepper. Continue cooking until cheese is melted and everything is combined well. Taste for seasoning.
  4. Transfer to large bowl. Stir in rice. Fold in broccoli.
  5. Place in greased baking dish. Top with cheese..
  6. Bake in 350 oven for about 1/2 hr or until bubbly.
  7. Other additions: bacon, ham, sautéed mushrooms, green chilies
