Crispy Oven Fries

I have a definite weakness for french fries, so anytime I can get a delicious home version, without deep fat frying, I’m really happy.  The ice water bath and the baking rack make these oven fries amazing.

Total Time: 2 hours

Yield: Serves 4

Ingredients

  • 4 Yukon gold potatoes, cut in small wedges
  • Extra virgin olive oil
  • Frankly Delicious all purpose seasoning* or other of your choice

Instructions

  1. Soak potato wedges in ice water for one hour. Drain and thoroughly pat dry the wedges.
  2. Heat oven to 450°
  3. Place a baking rack (like a cookie cooling rack) on a baking sheet. Oil the baking rack.
  4. Place the potato wedges in a large bowl, toss with oil and seasoning.
  5. Place wedges on the baking rack in a single layer. The wedges can stand upright, if you need room for them all to fit. Just don't put them right up against each other.
  6. Bake for 45 minutes to one hour, until deep golden and cooked through.

    Lannie, Could this recipe be used for sweet potatoes instead of Yukon Gold?
