I have a definite weakness for french fries, so anytime I can get a delicious home version, without deep fat frying, I’m really happy. The ice water bath and the baking rack make these oven fries amazing.
Crispy Oven Fries
Ingredients
- 4 Yukon gold potatoes, cut in small wedges
- Extra virgin olive oil
- Frankly Delicious all purpose seasoning* or other of your choice
Instructions
- Soak potato wedges in ice water for one hour. Drain and thoroughly pat dry the wedges.
- Heat oven to 450°
- Place a baking rack (like a cookie cooling rack) on a baking sheet. Oil the baking rack.
- Place the potato wedges in a large bowl, toss with oil and seasoning.
- Place wedges on the baking rack in a single layer. The wedges can stand upright, if you need room for them all to fit. Just don't put them right up against each other.
- Bake for 45 minutes to one hour, until deep golden and cooked through.
