We love chicken with big flavor and crispy skin. I finally decided to coat the skin with Dijon, then add all the seasoning. Crispy Skin Herb Roasted Chicken is easy and very delicious. I used leg quarters, because we prefer dark meat. And I pictured the seasonings I used, with the chicken. Make sure you use lots of seasoning, except those with salt. Most people under season, then wonder why their dishes don’t have big flavor!
Crispy Skin Herb Roasted Chicken
Ingredients
- Chicken leg quarters
- Dijon
- Italian seasoning
- Granulated garlic powder
- Seasoned pepper
- All purpose seasoning(s)
- Crusty bread or baguette
Instructions
- Heat oven to 375.
- Place the leg quarters (or whatever pieces you use) in a baking dish, skin side down.
- Brush the underside of each piece generously with Dijon. Now, sprinkle generously with all the seasonings that you’re using. It will look like you’re using too much.
- Turn the pieces skin side up, and brush with Dijon, and coat with all the seasonings.
- For leg quarters I bake for about 1 hour 25 minutes, until the skin is crispy. I like the way chicken quarters or thighs turn out when baked for over an hour. If you use chicken breasts or wings, you’ll have to adjust the time.
- Serve with good crusty bread, or baguette for the pan drippings.
