Crush the Day Oatmeal

Undoubtedly, oatmeal is one of my favorite breakfast foods.  I always look for new ways to prepare it.  On it’s own, oats are loaded with nutritional benefits.  However, add some delicious extras, and you have Crush the Day Oatmeal!

For some other amazing ways to prepare oatmeal, try: Baked Oatmeal, Overnite Oatmeal, Peanut Butter Baked Oatmeal, Peanut Butter & Jelly Baked Oatmeal, Banana Oatmeal Breakfast Cookies, Sweet Apple Baked Oatmeal, Baked Peanut Butter and Banana Oatmeal, or No Bake Oatmeal Cookies.  Also, if you like Chai tea, it’s excellent as the liquid to cook oatmeal in.  I buy the sweetened, boxed version.

Ingredients

  • Rolled oats (I make at least a couple cups)
  • 2-4 TBSP chia
  • 2 TBSP Flax (optional)
  • 1 can coconut milk
  • Almond milk, use plenty and add if needed when cooking
  • Little molasses
  • Little brown sugar
  • 2-4 TBSP peanut butter (just ground peanuts)
  • Cinnamon (I use 1 TBSP)
  • Pinch salt
  • 1 tsp vanilla
  • Little honey

Instructions

  1. I always make enough oatmeal for more than one breakfast. When you heat it the next day, add liquid if needed.
  2. In a medium pot, soak the oats and chia with the liquids first for about 1/2 hour, to get them to take up some of the moisture. Add more almond milk, if it's too thick to cook. Also, to save time in the morning, you can soak the oats and chia overnight, but place the pot in the fridge.
  3. Stir in the rest of the ingredients, except the vanilla and honey. Place the pot on medium heat.
  4. Cook, stirring frequently, until it's your desired consistency. Add almond milk as needed while cooking. It never takes me more than 10 minutes of cooking to get the consistency I like.
  5. Remove pot from heat and let it cook a bit, then stir in vanilla and honey. Adding honey after the mixture cools slightly helps retain it’s nutrients.
