It’s really great to be home. My brother fixed a smoked pork ribeye and smoked pork tenderloin, for our welcome home dinner. I fixed a cucumber salad, with cucumbers and onions from the garden. And we had some good fresh bread to go with it. It was delicious. I’ll be making pork fried rice with the leftover pork.
I have to say it’s pretty amusing around our house now, kind of like a cross between Grumpy Old Men and Two and a Half Men! I am the minority and will be living in the testosterone level for a while.
If you have lots of cucumbers, like we do now, this is a great, simple salad.
Cucumber Salad
Ingredients
- Thinly sliced cucumber
- Thinly sliced onion
- Red wine vinegar
- Drizzle of extra virgin olive oil
- Salt and pepper
Instructions
- Toss everything together and let marinate for 15 - 30 minutes before eating.
- Use a lot more vinegar than oil to make the cukes really delicious.
