This is an amazing slaw / salad. It’s another one of Angela’s creations. I added grated carrot, but mainly for color. And I used cilantro and basil instead of mint, because I was way out in the country and the grasshoppers have eaten all the mint, so I used what I had. I suppose some of the hoppers probably taste like mint, but…….I won’t finish that! I will say it’s good with basil and cilantro, but it’s fabulous with mint.
Cucumber Salad With Avocado

Ingredients
- 1/4 cup shredded jicama
- 1/4 cup corn kernels
- 1/4 cup shredded cucumber
- 1/4 cup shredded Asian pear or granny smith apple
- 2 tsp lime juice
- 1 TBSP minced jalapeno
- 1 TBSP chopped fresh mint
- 1 TBSP flat leaf parsley
- 1/2 avocado, diced
- 1 1/2 TBSP lime juice
- 1/4 cup olive oil
- 1 tsp salt
- 1/2 tsp black pepper
Lime vinaigrette:
Instructions
- Combine the jicama, corn, cucumber, pear, oil, lime juice, jalapeno, mint and parsley in a bowl. Add the avocado and toss gently to mix.
- Whisk together the lime vinaigrette and add to mixture. Taste and add additional salt and pepper, if desired
- Note: Add some cooked shrimp and you have a meal!
