Don’s Meatloaf

It’s hard to believe, but our refrigerator was almost bare on Friday.  So on Saturday, I cooked for a good part of the week.  It didn’t start out being my intention, but we were having company and my husband couldn’t decide between steak and meatloaf, and he really wanted mac and cheese (if you missed the recipe, click here).  I’m sure you already know, I cooked everything to go with either entree, and voila meals for the week!  The only thing I was disappointed in was the Black Walnut Cake, but I’m fixing it by soaking it with pecan liqueur.

I thought you might like the meatloaf recipe.  Obviously salad was one of our sides.

Don’s Meatloaf

Prep Time: 20 minutes

Yield: Serves 4-6

The first time I made meatloaf for Don, I got my instructions. I could put anything I wanted in it, but it must have corn and jalapenos!! And actually, it makes a great meatloaf.

Ingredients

  • 1 lb ground beef
  • 1 lb ground turkey
  • 1/2 – 3/4 cup whole kernel corn
  • 1/2 cup instant oatmeal
  • 1/3 cup onion, finely chopped
  • 2 eggs
  • 1 or 2 jalapenos, finely chopped
  • 2 TBSP Worcestershire
  • 2 TBSP ketchup or 1 TBSP tomato paste
  • 1 TBSP Dijon mustard
  • 1 TBSP granulated garlic powder
  • Salt and pepper

Instructions

  1. Heat oven to 375°
  2. Place everything in a bowl and mix gently until all ingredients are combined.
  3. Form into a loaf on a greased pan.
  4. Bake for 1 1/2 hours until done. If it doesn’t get brown enough on top, raise temperature to 450° for about 15 minutes.
